I think that I got it this time! The brownies, while un-iced, turned out splendidly. This is the final recipe:
- 2 c sugar
- 1 c butter or shortening (I used Smart Balance 1/2 and 1/2 sticks)
- 4 squares of bittersweet baking chocolate
- 1 t vanilla
- 4 large eggs (room temperature – thanks Kelly!)
- 2 c flour
- 1/2 t salt
Preheat the oven to 350. Melt the chocolate and butter together (if you are using shortening, melt the chocolate in the microwave or over a double boiler so that it doesn’t burn). Cream the choco-butter and sugar together in a mixer. Add vanilla. Gently beat in the 4 eggs. With a spoon or spatula or the stir function on the mixer, stir in the dry ingredients until they are just mixed in (really, don’t overdo it).
Bake for 25-35 minutes in a 9×13 pan.

In other news, the pediatrician gave us the green light to start experimenting with solid foods, so Leo has had his first taste of rice cereal (eh) and spinach and potatoes (yum). He only gets a very little bit once a day after a regular feeding, so it is just experimenting at this point. I’m pretty excited about it, though!
